Celebrating 30 years of Cillar de Silos
A winery with history and a future
This September, four members of the Brindisa Tapas team embarked on a journey to the heart of Spain to celebrate a significant milestone: the 30th anniversary of Cillar de Silos, a renowned winery whose exceptional wines we are proud to feature in our Brindisa Tapas restaurants and Brindisa retail shops.
Nestled in the heart of Castile León, specifically in Ribera del Duero, is Bodegas Cillar de Silos, a proudly owned and operated winery of the Aragón siblings—Oscár, Roberto, and Amelia. The Aragón family defines the winery’s philosophy with five key principles: purity, fruit, low yields, long ageing, and meticulous hand selection. The result is a collection of beautifully crafted wines that are distinctly Spanish, capturing the essence of their heritage.
From Vine to Glass
After passing through the historic streets and mediaeval architecture of Burgos, we arrived at the winery, nestled amid the rolling hills and fertile valleys. Warmly greeted by Amelia, we were taken straight to the 150 hectares of vineyards spread across small plots in the Garden of Ribera del Duero—some over 100 years old, including pre-phylloxera vines. Here, they cultivate two grape varieties: Tinto Fino, the native red that has flourished in the region for centuries, and Albillo Mayor, a historic white grape. Together, these grapes give both body and soul to their beautifully crafted wines.
Following our vineyard tour, we ventured to one of the winery’s most remarkable features—the 16th-century underground cellar. This ancient space, with its natural humidity and consistent temperature, provides the ideal environment for wines to mature in the bottle. Here, Amelia guided us through a tasting session, where we sampled a selection of wines, including the Tempranillo 2020, showcasing an intense color, ripe fruit aromas, and excellent structure and the Blanco 2023, a delicate Albillo Mayor with well-balanced acidity and complex nuances that reflect the expressiveness of the soil and the century-old vines.
La Fiesta
On our second day, we joined over 500 guests for an unforgettable celebration in the heart of the Ribera del Duero. The festive gathering was a vibrant blend of locals, international suppliers, and friends of Cillar de Silos, all coming together to mark this remarkable milestone. The evening unfolded with tables laden with an abundance of delicious local Spanish dishes, each perfectly paired with the estate’s finest wines. From traditional cured meats to hearty stews and fresh seafood, the feast reflected the richness of the region and the deep connections Cillar de Silos has fostered over the past 30 years. The atmosphere was electric, a true testament to the enduring relationships and shared passion that make this winery special.
