At Brindisa Tapas, we’ve always celebrated Spain’s most exceptional artisans – from cheesemakers to the country’s finest winemakers. This season, we’re delighted to introduce a new selection of wines from one of Spain’s most acclaimed producers: Raúl Pérez.
Hailing from the mountainous region of Bierzo in northwestern Spain, Raúl Pérez is a winemaker often described as a visionary. His approach is rooted in minimal intervention and maximum expression of terroir — allowing the land, the vines, and time itself to shape the wine. Working with ancient vineyards, often more than a century old, Pérez crafts wines that are both soulful and precise, capturing the wild beauty of Bierzo’s clay, sand, and slate soils.

La Vizcaína de Vinos
For many, La Vizcaína de Vinos represents the best value single-vineyard collection in Spain. Originally created as a family project, each bottling reflects a unique plot in the village of Valtuille de Abajo, showcasing the individuality of its old vines and soil.
At Brindisa, we’re pouring the La Poulosa 2020, a beautiful red made from Mencía. Expect ripe red fruit, soft tannins, and a whisper of earthy spice — a wine that’s both deeply satisfying and easy to love.
Pair it with our ibérico pork dishes or rich tapas such as our chorizo and lentils for a perfect match of depth and warmth.

Ultreia
Raúl Pérez’s defining range – subtle, soulful, and deeply personal
The Ultreia wines are perhaps Pérez’s most iconic creations – the project that marked his independence as a winemaker in 2004. Each bottling comes from tiny, carefully tended vineyard parcels, producing wines of incredible depth and finesse.
Our current selection includes:

Ultreia El Rapolao, Bierzo – Dark-fruited and perfumed, with sweet floral notes and silky tannins. From the celebrated Rapolao vineyard, it’s a red that balances structure and grace.

Ultreia La Vitoriana 2022, Bierzo – A north-facing site planted in 1881, yielding wines of freshness and complexity. This is one for the true connoisseurs – vibrant, lifted, and mineral-driven.
Pair Ultreia La Vitoriana with lamb or beef dishes; its depth and minerality echo perfectly with smoky, savoury flavours.
