Summer flavours at Brindisa

Picture this: a terrace warmed by the afternoon sun, a chilled glass of something crisp in hand, and the low hum of conversation drifting between tables. This is summer at Brindisa, and our new menu is built for exactly that feeling, unhurried plates made for sharing, and flavours that carry the sun of Spain with them.

Gazpacho, two ways. Every great Brindisa summer starts the same way, with a chilled gazpacho in hand. Go classic with our Virgin version, or add a kick with the Bloody Gazpacho. Either way, it’s the first sip that tells you the season has properly begun.

Back for its moment in the sun: Flor de calabacín. Courgette flowers only appear for a few precious weeks each year, and we wait for them. This summer we’ve given the dish a proper seasonal twist, stuffing it with Monte Enebro cheese and finishing it with caramelised peaches and fresh thyme. Catch it while it lasts.

Small plates, sunshine flavours

Cheese, elevated. For the moments that call for lingering a little longer, we’ve introduced two new sharing boards, Queso de Autor, a selection of artisan cheeses, and Tabla de queso clásica, a selection of DOP cheeses. Ask your server which cheeses have made it onto the board that day, there’s always something delicious to discover.

Ensalada de tomate, with peaches. Sun-ripened heirloom tomatoes meet Gredos goat’s curd and sweet peaches, dressed in Fino balsamico vinegar and Arbequina olive oil. It tastes like the height of summer on a plate.

From the rice pot: Arroz meloso de mar. Illa de Riu Bahia rice simmered in a prawn broth, finished with your choice of Argentinean red prawn or, for something a little more indulgent, half a native lobster. The kind of dish made for putting in the middle of the table and digging in together.

And for dessert - meet Tarta de abuela

A new way to finish: Tarta de abuela. Our newest dessert is a nod to the cakes made by Spanish grandmothers for generations, served up home-style, just as it would be straight from your abuela’s kitchen.
